Easy Tater Tot Casserole

Hey y'all, today I'm sharing the recipe for one of the meals I've been eating since I was a kid- tater tot casserole. This casserole is easy, delicious, comes together quickly, and is a crowd pleaser. I usually make this casserole when my house is loaded with testosterone (husband, brothers etc.) and it is always a BIG hit. You can read through the directions below, and at the bottom is a printable recipe card. Enjoy! 

Tater Tot Casserole



Ingredients:
1 pkg (1 lb) ground turkey or ground beef ( I do turkey because it's cheaper and healthier)
1 bag frozen tater tots
1 can cream of unprepared potato soup (you can use cream of mushroom soup instead but I hate mushrooms), 
1 4.5oz can green chiles
1 c. Shredded cheddar cheese
Garlic salt, to taste

Prepare: 
Preheat oven and cook tater tots according to package directions. 

While tater tots are cooking, brown meat in skillet. Add garlic salt to taste. 

Once meat is brown, mix in can of unprepared soup, and green chiles. 

Place meat mixture in the bottom of a a greased 8x8 pan. Top meat mixture with cooked tater tots and shredded cheese. 

Place back into oven for 15 minutes at 400 degrees or until heated through and cheese is melted.

  3. ... and immediately I'm confused as to why I don't eat tater tots for every single meal. I can't even remember the last time I made them at home! This is tragic.

    Also ... tater tots and cheese! Asia needs to learn about those soon =) I have never seen someone add green chlis in there but that sounds so good. You do know about Hatch green chilis right?

  6. Really?? It's always been cheaper! By a lot too- like $2 or more. I wonder if that's a regional thing? Interesting. Asia doesn't have cheese?? :O girl good thing you have flowers to make up for it! And oh yes haha- we actually use the green chiles that are pictured in the jar and those are Hatch. My parents buy like 10 lb of Hatch chile each year. I just put the can because I figured that's easier to find. That's awesome to hear that you Kansas people know of Hatch green chile! Do they have it out there or do you know about it because of your trips to Colorado?

  7. I have no idea it is regional but I will also admit I love my beef!


    I have eaten Hatch since I was little because my Dad is from ABQ. They sell some of the canned stuff at our grocery stores. Also, our grocery store in Woodward sold the Hatch chiles and I bought a whole bunch of them and would roast them in my oven. It burned your throat and eyes but was soooo worth it!


    I'm hoping to visit the Hatch farm when we travel to NM sometime.

  8. Oh I love my beef too! Haha I'm pretty sure I thought that was the only meat that existed for cooking with until like a year ago. And I didn't know your dad was from ABQ! My mom is from NM! And I totally know the burning eyes and throat feeling because we've done that in our oven too. And burning hands from peeling chile haha. I've never been to the Hatch farm but you have the right idea- sounds like it could be really fun! We literally put chile on almost everything
